Description

This pumpkin spice vodka cocktail is perfect for fall!


Ingredients

Units Scale

For the Cocktail:

  • 1 1/2 ounces vodka
  • 1 ounce pumpkin purée (see below)
  • .5 ounces orange cordial (see below)
  • pinch of sea salt
  • salted graham cracker crumbs (see below)

For the Pumpkin Purée:

  • 1 can pumpkin purée
  • 1 cup water
  • 1 cup lemon juice (about 5 lemons)
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla

For the Orange Cordial:

  • 1 cup orange juice
  • 1 cup white sugar

For the Salted Graham Cracker Rim:

  • 1 sleeve graham crackers
  • 1 tablespoon salt

Instructions

  1. MAKE THE PUMPKIN PUREE MIXTURE: Empty a can of pumpkin purée into a mixing bowl. Fill the empty can halfway with fresh lemon juice and halfway with water. Add to the pumpkin mix. Whisk in cinnamon and vanilla to combine. Set aside until ready to use.
  2. PREPARE THE ORANGE CORDIAL:  Add the orange juice and sugar to a saucepan and bring to a boil over medium heat. Simmer the mixture, stirring frequently, until the sugar is completely dissolved. Remove from heat and let cool.
  3. MAKE THE GRAHAM CRACKER SALTED RIM: Pulse crackers and salt in the food processor until super fine.
  4. ASSEMBLE THE PUMPKIN MARTINI COCKTAIL: Add the vodka, pumpkin purée mixture, orange cordial, and pinch of salt to a shaker filled with ice. Shake well and then strain into a coupe-style class that’s been rimmed with the salted graham cracker mix.

Notes

  • RECIPE SERVINGS: While this is for 1 cocktail, the recipe calls for making enough pumpkin puree (2 cups) and orange cordial (2 cups) for several cocktails.
  • MAKE AHEAD: You can make both the pumpkin puree mixture and the orange cordial in advance. Both can be stored in an air-tight container in the refrigerator for up to a week.
