Description

These refreshing Tom Collins popsicles are like boozy frozen lemonade on a stick. They’re easy to make with just 4 ingredients. And perfect for hot days! 


Ingredients

  • 1 cup fresh squeezed lemon juice
  • 3/4 cup simple syrup
  • 2 1/2 cup water
  • 6 tablespoons gin
  • Optional: fresh pitted and sliced cherries

Instructions

  1. Mix together the lemon juice, simple syrup, water, and gin. 
  2. Pour mixture into popsicle molds filling 3/4 of the way up.
  3. Add cherry pieces if desired. I used about 1 cherry per popsicle.
  4. Add the top to the mold and the popsicle sticks.
  5. Freeze until completely frozen, at least 8 hours.
  6. Remove mold from the freezer and let sit for a few moments until you are able to slide popsicles from the mold. Enjoy immediately.

Notes

  • STORING: I usually leave my popsicles in the molds until they’re ready to eat. I like this BPA-free popsicle mold, which has a cover. You can also remove the popsicles and wrap them individually in an airtight resealable plastic bag or plastic containers. Then put them back in the freezer until ready to serve.
