I don’t know about you but when the weather gets hot, I start to crave frozen cocktails. And these Tom Collins popsicles make the perfect adults-only frozen treat! They’re crisp, not too sweet, and just the right amount of boozy!

For this recipe, I’ve taken the classic Tom Collins cocktail, which is a simple gin cocktail made with gin, fresh-squeezed lemon juice, simple syrup, and sparkling water, and turned it into a popsicle. And I am telling you, they are so good!

How to Make Alcohol-Infused Popsicles

I’ve stayed pretty true to the traditional Tom Collins recipe, including the cherry garnish. But because alcohol has a lower freezing point than non-alcoholic ingredients, I’ve had to use a few tricks to keep these popsicles from turning into a slushie!

Here’s what you need to know about making frozen cocktail popsicles.

  • AMOUNT OF ALCOHOL: While water and juices freeze at 32 degrees F, gin won’t freeze until it gets to about -15 degrees F. So in order to get these to freeze and stay frozen long enough to eat, I had to adjust the ratio of alcohol to nonalcoholic mix in these Tom Collins popsicles. In other words, these popsicles have less gin than a typical Tom Collins cocktail. But don’t worry, they still taste amazing!
  • FREEZE TIME: These popsicles need some serious freezer time before they’re ready to eat. Let them freeze for at least 8 hours. Even better, let them freeze overnight.
  • SERVING: When you remove these Tom Collins popsicles from the freezer, let them sit for a minute or so until you can easily remove them from the popsicle mold. Then eat immediately. Also, don’t run molds under warm water to remove since they melt so quickly.
  • STORING: I usually leave my popsicles in the molds until they’re ready to eat. I like this BPA-free popsicle mold, which has a cover. You can also remove the popsicles and wrap them individually in an airtight resealable plastic bag or plastic containers. Then put them back in the freezer until ready to serve.

Tom Collins Popsicle Ingredients:

Ready to make these frozen treats? You’ll only need a few ingredients!

  • GIN: Any gin will work in these popsicles. Some of my favorites include Gray Whale Gin and Empress 1908 Gin.
  • LEMON JUICE: For the tastiest popsicles, I recommend using freshly squeezed lemon juice.
  • SIMPLE SYRUP: This recipe uses simple syrup for a bit of sweetness. To make simple syrup, just simmer equal parts of sugar and water (ie: 1 cup sugar + 1 cup water) in a saucepan over low heat until all the sugar has dissolved. For this recipe, I also added a few cherries to the mixture when making my simple syrup. This didn’t change the taste but did give my simple syrup a pretty pink hue. If you do this, just make sure to strain out any cherry parts after making the simple syrup.
  • WATER: While the classic Tom Collins recipe calls for topping the cocktail with sparkling water, I used plain water in this recipe.
  • OPTIONAL GARNISH: The typical garnish for the Tom Collins cocktail is a cherry. So I added a few fresh, pitted, and sliced cherries to the popsicles. But you can leave them out if you prefer.

All you need to do to make these popsicles is mix these ingredients together and then pour into your popsicle mold! So super easy.

Description

These refreshing Tom Collins popsicles are like boozy frozen lemonade on a stick. They’re easy to make with just 4 ingredients. And perfect for hot days! 


Ingredients

  • 1 cup fresh squeezed lemon juice
  • 3/4 cup simple syrup
  • 2 1/2 cup water
  • 6 tablespoons gin
  • Optional: fresh pitted and sliced cherries

Instructions

  1. Mix together the lemon juice, simple syrup, water, and gin. 
  2. Pour mixture into popsicle molds filling 3/4 of the way up.
  3. Add cherry pieces if desired. I used about 1 cherry per popsicle.
  4. Add the top to the mold and the popsicle sticks.
  5. Freeze until completely frozen, at least 8 hours.
  6. Remove mold from the freezer and let sit for a few moments until you are able to slide popsicles from the mold. Enjoy immediately.
