Description

The yummiest sheet pan egg-in-bagel sandwiches with toasted, buttery bagels, jammy eggs, and crispy prosciutto. Super quick and easy to make. Perfect for feeding a crowd!


Ingredients

  • 6 fresh, organic eggs
  • 3 bagels (any flavor), sliced in half
  • Softened unsalted butter
  • 6 slices thinly sliced prosciutto
  • Grated Parmesan cheese (or cheese of your choice), salt, and pepper to taste
  • Optional garnish: chives, avocado slices, and/or a drizzle of hot sauce.

Instructions

  1. PREP: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. PREPARE THE BAGELS: Using a cookie cutter or a pairing knife, enlarge the bagel holes until it’s large enough for the prosciutto and eggs to fit inside easily. Then generously butter both sides of the bagels and place them on the baking sheet.
  3. ADD THE PROSCIUTTO: Next, line the hole with a slice of thin-cut prosciutto.
  4. ADD THE EGGS: Carefully crack one egg into each bagel hole, keeping the yolk intact.
  5. SEASON: Sprinkle with grated Parmesan cheese, salt, and freshly ground pepper to taste.
  6. BAKE: Bake the bagels until the egg yolks are set, and the whites have solidified about 12 minutes. If you don’t like runny eggs, you might need to cook a few extra minutes.
  7. GARNISH AND SERVE: Top with garnishes of your choice and enjoy!

Notes

This recipe serves 6. Each serving is a half of a bagel, one egg, and one slice of prosciutto. If you have more people to serve, just adjust accordingly.
