Easy Creamy Mashed Potatoes (aka Pommes Purée) Recipe:

1. Add 1 pound potatoes (you can peel them for a smoother texture) to heavily salted, gently boiling water and cook until tender. I like to use yellow potatoes for the best flavor. 
2. While the potatoes are cooking, gently warm 1/3 cup heavy cream. To amp the flavor, I like to add a garlic clove and some fresh herbs like thyme or rosemary to the cream. 
3. Next, drain the potatoes. When cool enough to handle, cut them in half (or quarters) and put them through a potato ricer. You can also use a fine mesh strainer. 
4. Remove the herbs and garlic from the cream and gradually add the warm cream. Mix until incorporated.
5. Next, add 1/4 pound (one stick) of butter. I cut mine into small cubes and add slowly to ensure even distribution.
6. Add the potato mixture back to the pan and continue to mix until all the butter is incorporated and the texture is super smooth and creamy. 
7. Season with salt and pepper to taste. 
8. Spoon into a serving dish and add some garnish if desired. You can also add a few more dollops of butter if that’s your thing. Enjoy! 

Note: this recipe serves 2-3 people. To serve more, just adjust the ingredient quantities.
