Moist and Chewy Oatmeal Cookies with Chocolate Chips

I get it. Not everyone loves oatmeal cookies.

But these ones, with their golden and slightly crunchy edges and perfectly moist and chewy centers, are the BEST!

And depending on your mood — and what you have in the pantry — you can load them up with chocolate chips (or dark chocolate chunks!) or go the more traditional route and add raisins.

Either way, these easy-to-make cookies are a real crowd-pleaser.

Tips on Making Oatmeal Cookies

These cookies are simple to make, but here are a few tips.

  • BRING EGGS AND BUTTER TO ROOM TEMPERATURE: Make sure to bring your butter and eggs to room temperature. I know — it’s tempting to skip this step. But room temperature ingredients = fluffier, more tender baked goods!
  • USE OLD-FASHIONED OATS: Use old-fashioned whole oats for this recipe (not quick oats).
  • MOLASSES: The recipe uses a tablespoon of molasses. Molasses, which has a sweet, rich flavor that pairs perfectly with spices like cinnamon, is used to add moisture and to enhance flavor. If you don’t have any, you can sub with maple syrup or honey — or just leave it out.
  • ADD-IN OPTIONS: If you’ve opted for making these cookies with raisins, you can also add 1/2 cup of chopped nuts, like walnuts, to the recipe.
  • CHILL THE DOUGH: Chill the dough for at least 30 minutes before using to prevent your cookies from spreading during the baking process.
  • USE A SCOOP: Make it easy on yourself by using a cookie scoop, like this one, to make your cookie dough balls. Each ball uses about 1 1/2 tablespoons of dough.
  • STORAGE & FREEZING: This recipe makes about 3 dozen cookies. If you don’t need that many, you can freeze extra baked cookies or unbaked cookie dough balls. They’ll be good for up to three months. Once baked, the cookies can also be covered and stored at room temperature for about a week.

Best Oatmeal Cookies with Chocolate Chips (or Raisins)

These easy-to-make, classic moist oatmeal cookies can be loaded up with chocolate chips or raisins.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 tablespoon molasses, if using
  • 3 cups old-fashioned whole oats (not quick cooking)
  • 1 cup chocolate chips (or dark chocolate chunks or raisins)

Instructions

  1. Preheat the oven to 350 degrees F. Line 2 large baking sheets with parchment paper or silicone baking mats and set aside.
  2. In a large bowl, whisk the flour, baking soda, cinnamon, and salt together. Set aside.
  3.  Using a stand mixer or a hand mixer, cream the butter and sugars together on medium speed until smooth, about 2 minutes.
  4. Next, add the eggs and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl, as needed.
  5. Then add the vanilla and molasses and mix on high, until combined. 
  6. Add the dry ingredients to the bowl and continue to mix on low until incorporated.
  7. Then add the oats and chocolate (or raisins) and mix at low speed until combined.
  8. Chill the dough in the refrigerator for 30-60 minutes. 
  9. When ready to bake, roll the dough into balls and place 2 inches apart on the baking sheets. Bake until the edges of the cookies are lightly browned, about 12-14 minutes. The centers may still look a bit undercooked but will set during cooling.
  10. Let the cookies cool on the baking sheets for about 5 minutes before moving to a wire rack.

  1. I am not great in the kitchen but tried my hand at this recipe..added chocolate chips and walnuts (did not have molasses honey or syrup to use) and they turned out amazing!
