Confetti Skillet Cookie

And this one is made with only eight ingredients, requires minimal cleanup, and tastes so yummy!

Plus, you don’t need to roll the dough — or chill it before using. Just mix up the dough, press it into the pan, and bake it. That’s it! Super easy, right?

And because it’s so simple (and foolproof!), this recipe is also a fun one to try with kids (or adults) just learning to bake.

Tips on Making this Confetti Skillet Cookie:
  • As always, make sure your butter and egg are at room temperature when you start. Yep, this can be a tedious step, but it helps ensure your cookies come out fluffy and tender. It’s a science thing.
  • For the sprinkles, you can use any that you like. But I would recommend not using nonpareils in the cookie dough because they may bleed their color. For this cookie, I used Wilton’s Spring Bunny mix (you can also try these).
  • Also, I greased my cast-iron skillet and also lined the bottom of mine with parchment paper before adding the dough. This made it super easy to easily remove the cookie from the pan.
  • Don’t have a cast-iron skillet? You can also use a regular, oven-proof skillet.
  • I topped my cookie with a little ice cream. But these cookies also great without any topping.

Easy Confetti Skillet Cookie

This easy confetti skillet cookie has all the yummy taste of your favorite sugar cookies but is easier to make — and has sprinkles!


Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sprinkles of your choice, plus extra for topping

Instructions

  1. Preheat the oven to 350 degrees. 
  2. Grease the bottom and sides of a large, oven-proof skillet with butter or baking spray. You can also line the bottom with parchment paper.
  3. Beat the butter and sugar together using an electric or stand mixer until light and fluffy, about 3 minutes. Add the egg and vanilla and mix until incorporated.
  4. Whisk together the flour, baking powder, and salt in a separate. 
  5. Add the flour mixture slowly until incorporated, about 2 minutes.
  6. Mix in your sprinkles (gently).
  7. Add the dough to your prepared pan, and gently and evenly spread it in the pan using a rubber spatula. Then, smooth the top and add more sprinkles, if desired.
  8. Bake until edges start to brown and the top is golden (but still slightly soft), about 30-45 minutes depending on your oven and size of your skillet. 
  9. Cool on a wire rack until the cookie is set, about 15 minutes. If you are removing it from the pan, do so now. 
  10. Decorate and serve, as desired.
