Apple Cider Donuts

True fact: donuts might just be my favorite food group! And these baked apple cider donuts are on repeat in my house right now.

Plus, they’re perfect for lazy mornings. They’re super easy to make (you probably have almost all the ingredients in your refrigerator and pantry right now). And they bake up in under 15 minutes. Enjoy them while they’re still warm — and with a big mug of coffee.

Tips for this Apple Cider Donuts Recipe

This recipe is super simple. But here are a few tips.

  • Use Apple Cider: This recipe calls for using apple cider, which has a more concentrated apple flavor. But you can also use apple juice. 
  • What Pans Should I Use for Baked Donuts? I recommend using a non-stick donut baking trays. They’re pretty inexpensive and so helpful!
  • How Do I Get the Batter Into the Pans? I like to use a resealable plastic bag as a piping bag. Just cut a 1/2 inch opening off one corner.
  • Serving Suggestions: These donuts are best served warm and right out of the oven! You can also store them at room temperature for several hours.

Description

These baked apple cider donuts are super simple to make (and so good!!)! 


Ingredients

Scale
  • Nonstick cooking spray
  • 1 3/4 cup all-purpose flour
  • 1 1/4 teaspoon baking powder
  • 3/4 teaspoon fine sea salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg (dried or freshly grated)
  • 1 cup unsalted butter (2 sticks), at room temperature
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh apple cider

Instructions

  1. Heat the oven to 350 degrees. Lightly grease (2) 6-cavity donut pans with nonstick spray (I like to use a coconut oil spray).
  2. In a medium bowl, add the flour, baking powder, salt, 1 teaspoon cinnamon, and the nutmeg.  Whisk to combine and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream 10 tablespoons of butter, brown sugar, and 1/4 cup granulated sugar on medium speed until light and fluffy, 3 to 4 minutes.
  4. Add the eggs, one at a time, and mix until well incorporated after each addition, scraping the bowl as necessary.
  5. Beat in the vanilla extract.
  6. Add the flour mixture and mix on low speed until incorporated.
  7. With the mixer running, add the apple cider in a slow, steady stream and mix to combine. Scrape the bowl well to make sure the batter is fully mixed.
  8. Spoon the batter into prepared donut pans, filling them about 2/3 of the way full. I do this by using a resealable plastic bag with a 1/2-inch opening cut from one corner as a piping bag.
  9. Bake until evenly golden brown and a toothpick inserted into the center of the thickest portion comes out clean, 12 to 15 minutes. Rotate the pans halfway through baking.
  10. While the donuts bake, whisk the remaining 1/2 cup granulated sugar and 1 teaspoon cinnamon together in a small bowl to combine.
  11. In a separate small bowl, melt the remaining 6 tablespoons of butter in the microwave. Let the donuts cool for 5 minutes after baking, then un-mold them from the pans, brush with the melted butter and dredge them in the cinnamon sugar while they are still warm.
  12. Serve immediately, or let cool to room temperature.
